Calypso Bean

Mild in flavor, the Calypso bean is a dried heirloom bean that is a member of the kidney bean family of legumes. When cooked, the Calypso Bean typically retains it's distinctive spotted pattern and shape. It is a variety of bean that may be referred to as a Ying Yang or Ying Yan Bean because its appearance resembles the Chinese symbol for harmony, known as Yin and Yang. Another name often used for this bean is the Orca bean. When prepared, the Calypso Bean can be added to soups, stews, casseroles, pasta, rice, and mixed vegetables.

Phaseolus vulgaris, also known as the common bean, is a herbaceous annual plant grown worldwide for its edible dry seeds or unripe fruit (both commonly called beans).
